Bourbon-Glazed Bacon and Brown Butter Corn Fritters

Ingredients

  • 6 strips bacon, chopped
  • 3 tablespoons butter
  • 1 cup fresh corn kernels (or frozen)
  • 3/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 egg
  • 1/4 cup whole milk
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • Oil for frying

Instructions

  1. Cook bacon in a skillet until crispy. Remove and set aside, leaving 1 tablespoon rendered fat in pan.
  2. In the same skillet, melt butter over medium heat until it browns, about 4 minutes. Remove from heat and cool slightly.
  3. Combine flour, cornmeal, sugar, baking powder, cayenne, salt, and pepper in a bowl.
  4. Whisk together egg, milk, and the brown butter. Fold wet ingredients into dry ingredients until just combined.
  5. Fold in corn and bacon pieces. Heat 2 inches of oil to 350°F in a heavy pot.
  6. Drop batter by tablespoon into oil and fry for 2-3 minutes per side until golden. Drain on paper towels and serve warm.
