What is clarified lemon juice?
Fresh lemon juice with the pulp and cloudy solids gently filtered out. What is left is the bright acidity and aroma of the lemon without the haze, and without the bitterness that pulp develops once it sits. That is why the Bee’s Knees pours crystal clear from the bottle and tastes freshly squeezed every time.
What makes wildflower honey better than other honey?
Wildflower honey is gathered from whatever is blooming across a whole season rather than a single crop, so it carries a layered, slightly floral sweetness instead of the flat sugar note of clover or processed honey. In a Bee’s Knees it does more than sweeten. It rounds the gin’s botanicals and lets the lavender come through.
What is yuzu?
An East Asian citrus that tastes like grapefruit, mandarin, and lime met in one fruit, with an aroma closer to perfume than to juice. A little of it alongside the lemon gives the Bee’s Knees a brightness plain lemon cannot reach on its own.
Best glassware and garnish, if you want to get fancy?
A coupe with 1 large ice cube, or a rocks glass over ice if that is what is on the bar cart. Garnish with a thin lemon wheel or an expressed lemon twist. A single sprig of lavender if you have it.
