The Right Questions

What makes bourbon, bourbon?

By law it has to be made in the United States from at least 51% corn, distilled to no more than 160 proof, aged in new charred oak barrels, and bottled at 80 proof or higher with nothing added but water. The corn gives the sweetness. The new charred oak gives the vanilla and caramel.

What does high rye mean?

Every bourbon is mostly corn. The rest of the grain bill is the distiller’s choice, and a high-rye bourbon uses a larger share of rye, usually 20% or more. Rye brings pepper, baking spice, and a drier finish, which is what keeps the honey and lemon in a Gold Rush from turning sweet. That is why we use one.

When and where was the Gold Rush created?

New York City, around 2001, at the bar Milk & Honey, where bartender T.J. Siegel built it as a bourbon take on the Bee’s Knees: bourbon, lemon, and honey. It is one of the few modern classics young enough to have a known inventor.

Best glassware and garnish, if you want to get fancy?

A rocks glass over 1 large cube. Garnish with a lemon wheel, or express a lemon peel over the top and drop it in. Skip the cherry.
