Pairs perfectly with Gold Rush — Aged bourbon, fresh lemon juice, organic honey
Finger Food | Makes 20 pieces
Candied walnuts bring a sweet nuttiness that echoes the Gold Rush's honey undertones, while sharp blue cheese provides a briny, tangy counterpoint that mirrors the cocktail's citrus brightness. Fresh apple adds crisp sweetness and a delicate tartness that ties everything together in each bite. These sophisticated morsels are pure elegance—the kind of nibble that disappears almost as fast as the cocktail.
Ingredients
- 1 cup walnut halves
- 3 tablespoons honey
- 1 tablespoon butter
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
- 6 oz sharp blue cheese
- 2 crisp apples (Honeycrisp or Granny Smith)
- 2 tablespoons fresh lemon juice
Instructions
- Preheat oven to 325°F. Line a baking sheet with parchment.
- Melt honey and butter together. Toss with walnuts, cayenne, and sea salt.
- Spread on prepared baking sheet and roast for 12-15 minutes, stirring halfway, until fragrant and golden.
- Transfer to a plate and cool for 5 minutes. Break into smaller pieces.
