Ingredients

  • 1 French baguette, sliced diagonally into ¼-inch pieces
  • 2 tablespoons olive oil
  • 8 oz fresh goat cheese, softened
  • 2 tablespoons honey
  • 8 slices prosciutto, cut into bite-sized pieces
  • 1 tablespoon fresh lemon zest
  • 2 teaspoons fresh thyme leaves
  • Sea salt and cracked black pepper to taste

Instructions

  1. Preheat oven to 400°F. Brush baguette slices lightly with olive oil and arrange on a baking sheet.
  2. Toast in the oven for 5-7 minutes until golden and crispy. Remove and let cool slightly.
  3. In a small bowl, combine softened goat cheese and 1 tablespoon honey until well blended.
  4. Spread goat cheese mixture generously onto each toasted crostini.
  5. Top each piece with a small piece of crispy prosciutto.
  6. Drizzle with remaining honey (about ½ teaspoon per crostini).
  7. Sprinkle with lemon zest and fresh thyme leaves.
