Miso Butter Pasta with Crispy Sage and Lime

Ingredients

  • 8 ounces spaghetti or linguine
  • 4 tablespoons butter
  • 2 tablespoons white miso paste
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 12 fresh sage leaves
  • 2 garlic cloves, sliced thin
  • 1/4 teaspoon habanero flakes
  • Fleur de sel
  • White pepper
  • Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions until al dente; reserve 1 cup pasta water.
  2. In a large skillet, melt 2 tablespoons butter over medium heat until nutty and golden.
  3. Add sage leaves to browning butter; cook 2 minutes until crispy, then remove to paper towel.
  4. Add remaining butter to skillet with garlic; cook 1 minute until fragrant.
  5. Whisk in miso paste, slowly adding 1/4 cup pasta water until smooth.
  6. Add cooked pasta to skillet and toss, adding more pasta water if needed for silky sauce.
  7. Remove from heat; stir in lime juice and zest.
  8. Season with fleur de sel and white pepper.
  9. Divide between bowls; top with crispy sage, habanero flakes, and Parmesan if desired.
