Ingredients
- 12 fresh figs, halved
- 1.5 cups apple cider
- 1/4 cup honey
- 1 cinnamon stick
- 4 whole cloves
- 2 star anise
- 1 teaspoon vanilla extract
- 1 cup mascarpone cheese
- 2 tablespoons honey (for whipping)
- 1/4 cup heavy cream
- Pinch of salt
- Toasted pistachios for garnish (optional)
Instructions
- In a saucepan, combine apple cider, 1/4 cup honey, cinnamon stick, cloves, and star anise. Bring to a simmer.
- Add fig halves and vanilla extract. Reduce heat to low and poach gently for 12-15 minutes until figs are tender and syrup is fragrant.
- Remove from heat and let figs cool in the poaching liquid for at least 30 minutes.
- In a bowl, whip together mascarpone, 2 tablespoons honey, heavy cream, and salt until soft peaks form.
- Divide warm or room-temperature figs among serving bowls. Drizzle with poaching syrup and top with a generous dollop of whipped mascarpone.
- Garnish with toasted pistachios if desired and serve.
